Recipe of the Day

Here’s something easy and healthy I just made. I got this recipe from my noggin. It was inspired by a) I was hungry b)The ingredients were already in the pantry

Crazy Bean Tuna Salad
In a large bowl, stir together
1 can chickpeas
1 can black beans
1 chopped red bell pepper
1 can sliced beets, sliced into quarters
2 cans tuna fish
1/2 can of black olives (no pits. I can never remember, are those called “pitted”?)
about a handful shredded mozzarella cheese
some balsamic vinegar

I think corn would have been awesome in this but I don’t have any.
